Mixed Nuts & Seeds Cookies - Ideal for Pregnancy and Lactation



I was inspired by a reel I recently came across on Instagram by @myfoodspree that simply mixed different nuts, seeds and maple syrup to make these delicious no flour nut and seed cookies.


The nutrition profile for something like this would be ideal for pregnancy and lactation because it is high in healthy fats, protein, minerals and fiber and can help you meet your nutrient needs while pregnant and postpartum. They make for a great postpartum one handed snack that gives you the energy you need while breastfeeding.


I gave this recipe a try, made some tweaks to it (because mine didn't stick together at first) and came up with this delicious cookie recipe that turned out super yummy and easy!


These cookies make an ideal snack between meals that will keep you full for longer while providing you with essential nutrients. Give them a try!





Mixed Nuts & Seeds Cookies

(Ideal for Pregnancy and Lactation)


Ingredients

for approximately 16 Cookies


1 cup Walnuts (chopped)

1 cup Pistachios (deshelled)

1 cup Pumpkin Seeds

1/2 cup Almond Flour

1/4 cup Chia Seeds

1/2 cup Dried Unsweetened Cranberries

1/4 cup Maple Syrup

2 Eggs

1 cup Dark Chocolate Chips (melted)



Directions:

  1. Preheat oven to 350 degrees F (180 degrees Celsius). Line a large baking sheet with parchment paper and set aside.

  2. Add everything but the chocolate chips to a bowl and mix to combine.

  3. Scoop the mixture onto prepared baking sheet, about 2 heaping spoonfuls per cookie.

  4. Bake in oven for about 15 to 20 minutes, or until edges begin to brown.

  5. Remove from oven and let the cookies cool. Dip them in melted chocolate and let them dry. Store in a cool, dry place.
